I eat healthy too but I usually find myself so busy during the day that I don't eat lunch. I will grab bites of what I make for the kids, but I am bad at actually sitting down and eating and enjoying a midday meal. The main problem with that, is that when it hits about 4, I am starving and tired.
Add that to the busy-ness of our family, and my best dinner intentions go out the window. I need to make meals that are fast and healthy and taste good.
In a quest to simplify meal times I have been dabbling with frozen foods. In the past our family hasn't really used frozen foods. I have always been under the impression that frozen meals are bad for you and taste like cardboard.
But over the past few months as I have been looking for quicker meal alternatives, our family has been pleasantly surprised. I love that the meals are quick to get on the table. They let me have access to veggies that are hard to find fresh during the winter months, and they offer lots of choices for our family. We don't eat them every night, but they are perfect for our "busy nights." The nights when we have activities and don't get home until 6:30.

I have started sitting down with the kids and enjoying our meal time together. It has quickly become one of my favorite times of the day.
